The Istrian cattle once helped the farmers work the fields and pulled stones for house and wall building, fed on poor pastures they gave just a bit of milk to feed the family. Today their meet is prepared as authentic natural gastronomic delicacy, peculiar to this area.

The tradition of flavours, once again returning to the kitchens of most prestigious restaurants and into the limelight of renowned gourmets, enriches the tourist offer of the Istrian region giving new life to ancient cooking methods offering delicious aromas which once used to spread from the rural homes of Istria.
